Sustainable Food Service at Gathering 2025

Cyndi Pugh, caterer for Gathering 2025, shares her commitment to sustainability in food service.

As the dedicated caterer at Rockway Mennonite Collegiate and a professional with over 25 years in food and hospitality, I, Cyndi Pugh, am committed to sustainability in our food practices. Over the years, the industry has evolved significantly in reducing its environmental footprint, though there remains room for continued progress.

In my role, I carefully prioritize sustainability in every choice. From selecting locally sourced, in-season products with minimal packaging to making dishes from scratch, I strive to maximize the value of each ingredient. All organic waste is composted, ensuring that we contribute positively to the environment whenever possible. Additionally, I am committed to using reusable serving materials and washing dishes rather than opting for single-use items, to minimize waste.

While I am dedicated to sustainable practices, I recognize that economic factors can sometimes pose limitations. Nonetheless, I remain committed to balancing ecology with efficiency as we continue to grow our sustainable efforts.

NOTE: There will be three menu options at the Gathering...

  2. Gluten and dairy free
  3. Vegan
